Lamb shank with red wine • Here is the recipe in detail: • For 4 people • TOTAL TIME: 200 min • Preparation: 20 mins • Cooking: 180 min • Ingredients : • 4 lamb shanks • 1 onion • 2 cloves Garlic • 1 stalk of celery • 1 Carrot • 3 tbsp. tbsp Flour • 50 cl Red wine • 50 cl Veal stock • 1 tbsp. teaspoon Tomato concentrate • 2 bay leaves • 2 sprigs of thyme • 1 small bunch of flat-leaf parsley • 8 tbsp. tbsp Olive oil • Salt • Pepper • Step 1: Remove the first skin from your onion and chop it. Pass your garlic cloves through a garlic press to recover the pulp. • Peel your carrot and cut it into small pieces. Wash your celery stalk and cut it into small pieces. • Step 2: In a casserole dish, color your salted lamb shanks on all sides with 4 tbsp. tablespoon of oil over high heat. • Reserve your shanks and remove the fat from your casserole dish. • Step 3: In the same uncleaned casserole dish, brown the garlic, onion, carrot, celery and tomato paste for 5 minutes with 4 tbsp. tablespoon of olive oil, taking care to mix regularly to avoid any coloring. • Step 4: Add the flour and scrape the bottom of the casserole dish with a wooden spoon. • Add the red wine and the veal stock, always scraping the bottom of your casserole dish. • Step 5: Once boiling again, add the shanks, bay leaf and thyme. • Reduce the heat, cover and cook for 2 1/2 hours.
