This step is relatively simple but there are a few tests that you will want to run. Additionally, you will want to take measures to protect your wine from spoilage microbes and oxidation by sanitizing, minimizing air contact, and sulfiting at this point. The grapes used for this wine are Cabernet Sauvignon from the Central Valley of Chile.
