I will show you how to prepare them both according to the traditional recipe with some original variations. • Canederli are a typical Tyrolean and South Tyrolean dish. They can be prepared with red beards, spinach and cheese. Today we are going to cook them in a truly original way: get ready to enjoy my small fried dumplings, ideal even for an aperitif. Homemade and fried dumplings, unlike classic boiled dumplings, are smaller in size and more fragrant. • Ingredients • cubed stale bread • milk • 2 eggs • parmesan cheese • cubed assorted mountain cheeses • onion and extra virgin olive oil. • How to make Italian Canederli • Pan-fry our onion and leave it in a bowl for now. • Prepare a cheese mixture by adding some parmigiano and by using the minipimer. • Add some bread and the cheese mixture in the bowl. • Pour in the milk and add the eggs. • Knead by hand and gradually add milk or bread and cheese to ensure consistency. • Make balls by using the mixture we have just created. Ideally, no cracks should form.
