RECIPE ⬇️ PRIME RIB ~ Enjoy! • Serve 4-5 • INGREDIENTS: • 4 lbs Boneless Prime Rib Roast (4.8 lbs in the video) • 2 Tbsp - Dried Rosemary (Use fresh Rosemary if you have it!) • 1 Tsp - Liquid Smoke • 1 stick unsalted butter, soften at room temp • Kosher Salt • Cracked Black Pepper • 1 Whole Onion • 1 Whole Carrot • GARLIC HERB BUTTER: • 1 Whole Garlic Head • 2 Tbsp Olive Oil • Preheat oven to 400°F • Cut the top off the garlic head to expose the cloves and place on a large piece of foil. Drizzle Olive Oil all over the garlic. Close the foil loosely. Roast for 30 minutes. Squeeze the roasted garlic from the peel into a small bowl. Mash the garlic using a spoon. Add the roasted garlic to a bowl with soften room temp butter, Rosemary, and liquid smoke. Mix well and set aside • ROAST PREP: • Sprinkle kosher salt and cracked black pepper evenly onto each side of the roast • To a roasting tray, add cut onions and sliced carrots, place a wire rack on top • Place roast on the wire rack • Spread the garlic herb butter evenly onto each side • *SKIP THESE NEXT TWO STEPS IF COOKING THE SAME DAY • Cover the roast with plastic wrap, place into the fridge overnight • The next day, remove the roast from the fridge and carefully remove the plastic wrap • ROASTING: • Be sure to let the roast sit for one hour on the counter to come to room temperature • Preheat oven to 495°F • Insert a meat thermometer into the center of the roast • Place roasting tray on the center rack of the oven and set timer for 15 minutes • After 15 minutes, reduce the heat to 265°F • Let it continue roasting in the oven until the meat thermometer reaches a temp of 122°F for a medium rare OR until your desired level of doneness • Remove from oven, place the roast onto a carving board • Cover loosely with foil and let it rest for 15 minutes. The internal temp of the roast will continue to rise slightly while resting. • Cut and remove the strings, slice meat across the grain for serving • Served with a loaded baked potato Au Jus sauce 👌🏼 • AU JUS SAUCE: • 1/4 cup - All Purpose Flour • 3 cups - Beef Broth • After removing the roast from the pan, scoop out the excess fat, leaving about 1/4 cup of fat plus the browned drippings and meat juices in the roasting pan • Place the roasting pan on the stovetop on medium high heat.
