Maja Blanca also known as coconut pudding is a Filipino dessert made primarily from coconut milk and cornstarch. The dish would be called Maja Blanca Maiz or Maja Maiz. The name is purely Spanish where “maja” means to pound/grind and “blanca” means white. Here, I will show you my version using cheese and toasted peanut toppings. • Related topics: • How to cook maja blanca with peanuts, maja mais, maja blanca with coconut milk, maja blanca special, how to make maja blanca special, • Pinoy coconut pudding, maja blanca with cheese, maja blanca using corn flour. • INGREDIENTS: • 1 cup coconut milk • 1 cup evaporated milk • 1 cup condensed milk • 3/4 cup sugar • 1 cup whole corn kernel • 1 1/2 cup cornstarch • 800 ml water (500 ml added to the mixture, 300 ml used to dissolve cornstarch) • 1/4 cup toasted peanut • 80 grams grated cheese • INSTRUCTIONS: • 1. Combine coconut milk, evaporated milk, cornstarch, sugar, condensed milk, corn kernel and water in a pot. Stir thoroughly; it should be free of lumps. • 2. Bring to a boil in a medium heat. • 3. Dissolve cornstarch. • 4. Once the mixture is boiling, lower heat and gradually pour cornstarch mixture, stirring so you can ensure it incorporates and doesn’t form into lumps. Continuously stir and cook for 5 to 7 minutes until thick like pudding or until you get the consistency you want. • 5. Once done, transfer in a prepared winnowing basket with banana leaf, evenly distribute then let it cool down. • 6.
