SUMMER CITRUS SALAD with Lemon-Shallot Vinaigrette is the salad of the summer! šš • I was in LA last week and stopped by Erewhon and ordered this salad and loved it so much, I knew I had to come home and recreate it—my version? Dare I say…BETTER. It is loaded with all your greens—raddichio, kale, and romaine, and filled with grapefruit and orange segments, avocado and sunflower seeds for crunch, then tossed with a thick, homemade lemon-shallot vinaigrette that is so delicious, you will want to bottle it up and use it for everything. I could not wait to wake up this morning and share this recipe with you!ā£ • ā£ • Makes 2 meal-size salads or 4 side saladsā£ • ā£ • Lemon-Shallot Vinaigrette (makes about 3/4 cup)ā£ • 1/3 cup olive oilā£ • 2 shallots, finely choppedā£ • 2 cloves garlic, mashedā£ • 1 tb dijon mustard • 1 lemon, zested and juicedā£ • 1/2 tsp kosher saltā£ • 1/2 tsp black pepperā£ • ā£ • Salad base:ā£ • 1 cup raddichio, sliced thin (1/2 head)ā£ • 1 small bunch curly kale, stems removed, chopped thin (1 1/2 cups)ā£ • 1 head romaine, chopped (2 cups)ā£ • 2 avocados, cut into cubesā£ • 1 large grapefruit, segmented cut into 1 inch piecesā£ • 1 orange, segmented cut into 1 inch piecesā£ • 1/2 cup sunflower seeds, I like salted, but unsalted is fine tooā£ • ā£ • To make the dressing, whisk together all of the ingredients for 1 minute, until fully emulsified. Taste and adjust seasonings as needed and set aside. Next, chop the raddichio, kale, and romaine and transfer to a large bowl. Cut the avocados into small cubes and add to the bowl. Finally, peel the grapefruit and orange, cut into pieces and add to the bowl. Add the sunflower seeds.
