✨👇🏼 Full recipe: • RADISH KIMCHI • Ingredients: • 6 lb. Korean radish or daikon • 3 Tbsps sea salt or kosher salt • 3 Tbsps sugar • 1.5 tsp ginger • 3 Tbsps garlic • 1/3 cup fish sauce • 1 cup Korean hot pepper flakes • 1 cup garlic chives, chopped • 4 green onions, chopped • 1/2 cup radish juice • Steps: • Wash and peel radish. • Cut radish into bite size (about 1” cubes). • Mix radish, salt sugar in a bowl. Let sit for 30 minutes. • Drain juice but save 1/2 cup. • In a blender, add ginger, garlic, and 1/2 cup of radish juice. Blend till smooth. • Combine radish, blended ginger garlic mixture, fish sauce, Korean hot pepper flakes, green onions and garlic chives. Mix well. • Pack radish kimchi tightly in a food safe container, press down to remove as much air as possible. Leave a little space on top. Close the lid. • It’s ready to eat right away. Or you can let sit and ferment in room temperature for a few days (depending on the temperature and how sour you prefer) then store in the fridge. I usually leave mine on the kitchen counter for 2 days. • Radish will release liquid and if left in room temperature, you will see bubbles in the first few days. It’s the sign of successful fermentation. You may or may not need to burp the jar (open the lid quickly and close again) to release excess gas. Press down radish to make sure every piece is immersed in liquid before storing in the fridge. • Notes: • In this video, I was making 35 lbs of radish kimchi. That’s a lot! If it’s your first time, I recommend making 6 pounds (or even 4 pounds). You can easily adjust the recipe measurements according to your needs. • Before making any kimchi, it’s important to clean all surface, and tools (e.g. mixing bowl, knife, cutting board, and kimchi container, etc.) thoroughly. I recommend washing everything with dish soap and hot water then thoroughly dry with a clean towel.
