Kothamalli Podi Recipe No.: 11 • This podi is an easy recipe. It can be mixed with hot rice along with sesame oil taste simply superb. Goes well with sutta appalam. It can be stored in airtight container in room temperature. The measurements given in this recipe yields ½ cup of kothamalli podi. • Ingredients: ( 1 cup = 240 ml ) • Coriander seeds - ¼ cup + ⅛ cup • Dried red chilli - 1 • Whole black pepper - ½ tsp • Cumin seeds - ½ tsp • Garlic - 1 ½ cloves • Salt - to taste • Method: • 1. In a pan, add coriander seeds, dried red chilli, garlic and dry roast it. • 2. When its becomes golden brown, remove from fire and transfer to plate. • 3. In the same pan, add whole black pepper, cumin seeds and dry roast it. • 4. When nice aroma comes from it, remove from fire and transfer to plate. • 5. Allow it to cool. • 6. In a mixie, add all fried items along with salt and grind it into powder. •     Store it in an airtight container.
