Parma Ham Carbonara Papalina

Parma Ham Carbonara, also known as Papalina, offers a delightful twist on the classic Carbonara. In this version, I incorporate a touch of wine and blend Parmesan and Pecorino cheeses in equal parts to harmonise with the robust flavour of Parma Ham, distinguishing it from Pancetta, Bacon or Guanciale. • Whether or not the tale of Pope XII requesting a lighter version of Carbonara from his chef is true, this dish undeniably earns its place in your culinary repertoire if you're a pasta enthusiast. • Ingredients: • 200g of spaghetti, bucatini, tagliatelle, or any pasta of your choice. • 100g of Parma Ham (you can also use Guanciale, Pancetta, or Bacon if you wish). • 1 whole egg and the yolk from another egg • 50ml of dry white wine • 25g of Parmesan cheese and 25g of Pecorino cheese, both grated (you can also use just Pecorino or Parmesan, of course) • 1 white onion, chopped very finely • A knob of butter • Salt and pepper • Cooking Instructions: • Chop the ham or bacon into small strips and finely chop the onion, as demonstrated in the video. • Break a whole egg and the yolk from another into a bowl, whisk, then add the grated cheese and blend together. • Melt the butter in a frying pan, then add the finely chopped onion. Mix until the onion is cooked and turns golden in colour. • Add the ham and mix together with the wine until the alcohol has evaporated. Be careful not to overcook the ham, as it should not become crispy like in a traditional carbonara. • Meanwhile, start cooking the pasta, ensuring you do not oversalt the water, as the cheese and ham will already have some salt. • Halfway through cooking the pasta, add a ladle of water to the egg mixture to partially pasteurize the eggs and achieve a creamy consistency due to the starch in the water. • Once the pasta is cooked, add it to the egg mixture and finish cooking the pasta in a bain-marie style, on top of the water, to prevent overcooking and to ensure the eggs finish pasteurizing without becoming scrambled. This will take about a minute. • Serve the pasta hot, topped with a generous amount of black pepper and a bit more grated cheese for garnish. • And there you have it, a delicious meal ready in no time at all.
