Bettys Baked Picnic Ham

Betty demonstrates how to make a Baked Picnic Ham for Easter. This entree is very tasty served with Raisin Sauce (the previous video in Betty's Kitchen). • Baked Picnic Ham • 8 to 9 pound picnic ham (cured pork shoulder), uncooked • 2 cups light brown sugar, firmly packed • 2 cups water • 1 cup white vinegar • 13 ounces cola-flavored soft drink (I used Coca-Cola.) • Remove plastic wrap and any packing material from picnic ham and discard. If picnic ham is secured in plastic netting, leave the netting on until after ham is cooked. Place ham in appropriately-sized roasting pan. In a large measuring cup or bowl, mix together brown sugar, water, vinegar, and cola drink. Pour over ham in roasting pan. Cover roasting pan with a lid that fits. Bake ham at 400 degrees for 3 hours. Transfer ham from roasting pan to cutting board. Remove plastic netting. Tent ham with aluminum foil and let rest about 5 minutes. Carve ham into thin slices, cutting against the grain, and place slices on a large platter. Serve while hot with Raisin Sauce alongside. (This ham is also good cold. You may slice the leftover ham and refrigerate it for sandwiches, salads, etc.) I hope you love this ham, and I wish all of you a VERY HAPPY EASTER!
