Rougaille Sevrette Sec Dried Shrimps in a Creole Sauce

8-10 Tomatoes • 1/2 Cup Dried Shrimps • 1 Onion • 1 Tbsp Ginger and Garlic Paste • Small Bunch of Coriander • 1-2 Small green Chillies (optional) • 2 Spring Onions • 2 Sprigs of Fresh Thyme • 4-5 Curry leaves (optional) • 2 Tsp Salt • 1 1/2 Tbsp Oil • Salt and Pepper • 1. Place the dried shrimps in a bowl and add in some boiling water for the shrimps to soak. Cover and set aside. • 2. Roughly chop the tomatoes. You can use a food processor if you want, but make sure it stays a bit chunky. • 3. Chop the onion, coriander, spring onions and chillies. • 4. Heat half the oil in a frying pan. Add the onions and sauté for a little bit then add the thyme, chillies and curry leaves and sauté for a little bit. • 5. Next you have to add in the ginger and garlic and stir for few more seconds • 6. Add in the chopped tomatoes. Stir well. Lower the heat and let it simmer for 15-20 minutes. Stir frequently until the tomatoes are cooked through. • 7. In the meantime, drain the dried shrimps and keep them ready. • 8. Push the rougaille to the side of the pan and pour the rest of the oil on the side that’s empty then add in the shrimps. Sauté them for 10-20 seconds in the oil. • 9. Then mix it in the rougaille. • 10. Season with salt and pepper. • 11. Remove from heat. Sprinkle the chopped coriander and spring onions on top. • 12.
