This video discusses a very important component in carbohydrate chemistry - the formation of hemiacetals and hemiketals. Carbohydrates are far more stable if they are in the cyclic form and these forms are made possible by the reaction of the carbonyl carbons in the aldehyde or ketone groups with the hydroxyl groups in these monosaccharides such as glucose and fructose.
