Hi, • My trini mother-in-law and I cook Fungi. This is a dish specialty of the US Virgin Islands. It's quite a remarkable dish to see unfold. I love cornmeal and this turn out pretty well. Fungi is normally eaten with fish (heavily sauced) or Callaloo (according to my husband). I love the taste of okra mixed in. This was certainly a different texture of food that I have never tried. But it was fun to make.
