Pioneer Woman’s Pecan Pie

This pie is easy and delicious! Give it a try! • #susanssoutherncooking #easyrecipe #pecanpie • Pioneer Woman’s Pecan Pie • 1 cup light corn syrup • 1 cup sugar • ¼ cup packed brown sugar • 3 eggs, beaten • ⅓ cup butter, melted and slightly cooled • ½ tsp. salt • ¾ tsp. vanilla extract • 1 heaping cup finely chopped pecans • 1 unbaked pie crust* • 1. Preheat the oven to 350°F. • 2. In a large bowl, combine the corn syrup, both sugars, beaten eggs, the butter and vanilla. Whisk until totally combined. • 3. Place the chopped pecans in the bottom of the pie crust. • 4. Pour the mixture over the top of the pecans. • 5. Cover the pie in foil and place on a baking sheet. Bake the pie for 35 minutes. Remove the foil, then bake for 25-30 more minutes more, being careful not to burn the crust or pecans. (If it seems to be browning too quickly, cover it with foil again). • 6. The pie should not be overly jiggly when you remove it from the oven. If it is, just continue cooking in 5-minute intervals until done. Let the pie cool before slicing. Enjoy! • *I usually double the recipe to make 2 pies but I have a lot of wasted filling left over so I chose to try using one making to see if it was enough filling for 2 pies. I had a deep dish pie shell and a traditional size pie shell in my freezer. I had enough for two pies although it would probably be better to have 2 traditional size crusts. Divide only the filling.
