If you've been following @marcyinspired1442, you know that many of my recipes include Hatch chile. That's because I'm a native New Mexican and chile is a staple in our diets. Depending on where you live, you may have seen the label, Hatch chile. Hatch is a tiny farming community in southern New Mexico, about 40 miles northwest of Las Cruces, that is known for having the most flavorful chile. In fact, it's called the Chile Capital of the World. Tens of thousands of people make an annual journey to Hatch during the months of August and September because that's peak harvest season. That's when they load up on enough Hatch chile to get them through the year. You can buy it in 40 pound sacks and have it roasted and even peeled on the spot. After that, you just freeze it and use it throughout the year in all your favorite dishes. In this video I take you along as I get my fix. • If you can't make the trip in person, don't worry.
