Bettys Vanilla Wafer Bourbon Balls

Betty demonstrates how to make Vanilla Wafer Bourbon Balls. Bourbon Balls are a traditional sweet treat in Kentucky. Below is a recipe where all ingredients are halved, making about 2 ½ dozen small Bourbon Balls. • Vanilla Wafer Bourbon Balls • 1 ¼ cups vanilla wafers, crushed (Measure after crushing.) • 1/2 cup confectioner's sugar • 1 tablespoon cocoa • ½ cup chopped pecans • ¼ cup Bourbon whisky • 1 ½ tablespoons Karo light corn syrup (You may substitute another syrup here.) • confectioner's sugar, for rolling • Crush vanilla wafer until fine, and then measure. Mix 1 ¼ cups vanilla wafer crumbs with 1/2 cup confectioner's sugar and 1 tablespoon cocoa. Add ½ cup chopped pecans. Set aside. Blend together ¼ cup Bourbon whisky and 1 ½ tablespoons corn syrup, then mix into crumb mixture. Form into teaspoon-sized balls and roll in confectioner's sugar. Place in a serving dish, cover with plastic wrap, and refrigerate until set. You may store these in a tightly-covered container for several days before serving.
