How to make the Best Healthy Granola at Home. • This granola recipe is simply the best. It has all the amazing flavours, nuts and fruits. The perfect healthy snack for your family. • Ingredients • Dry ingredients • 4 cups old fashioned oats • 1/2 cup almonds • 1/4 cup cashew nuts • 1/4 cup hazelnuts/ walnuts • 1/4 cup pecans • 1/2 cup coconut flakes • 2/3 cup dried fruit (raisins and dry mango) • Spices • 1/2 tsp salt • 1 1/2 tsp ground cinnamon • 1/4 tsp ground ginger • Pinch of nutmeg • Wet ingredients • 1/2 cup coconut oil or vegetable oil • 1/3 cup honey or 1/4 cup brown sugar • 1 1/2 tsp vanilla extract • Directions • 1. Preheat oven to 150C or 300F, line baking tray with parchment paper or foil, set aside. • 2. Combine oats, almonds, cashew nuts, hazelnuts, pecans in a large bowl (dry ingredients) • 3. Spice with ginger, cinnamon, nutmeg and salt. • 4. In another bowl, combine coconut oil, honey and vanilla extract (wet ingredients). • 5. Combine wet ingredients and dey ingredients. Stir well to coat evenly. • 6. Spread the mixture evenly on baking sheet. • 7. Bake at 150C for 20 minutes in total. • 8. Stir at the 8 minute mark, bake for another 4 minutes; stir in the coconut flakes at the 12 minute mark and continue baking for another 8 minutes till crispy. • 9. Cool completely and stir in the raisins and dried fruit. • 10. Store in an air tight container for up to 1 month in the fridge or on the counter top. • Can be used in yoghurt parfaits, Nice creams, as a topping for muffins and any other sweet treat.
