Chicken Minis: • 1 lb boneless skinless chicken breast or thighs, cut into 1 1/2 inch cubes • 1 cup pickle juice • 1/2 cup buttermilk • 1 cup all-purpose flour or Louisiana Homestyle Chicken Fry Mix • 1 tablespoon chili powder • 3 tablespoons cornstarch • 1 teaspoon sugar • 1/2 teaspoon cayenne pepper • Pinch of salt and pepper • Package Sister Schubert Rolls • 1/4 cup honey, warmed • Marinate chicken, covered and refrigerated for up to 4 hours in 1 cup pickle juice + 1/2 cup buttermilk. • Meanwhile, put the flour (or Louisiana Mix), cornstarch, sugar, chili powder, cayenne pepper, and a pinch of salt and pepper in a bowl and whisk to combine. • Remove chicken from the marinade and shake off excess. Add chicken pieces to your flour mix and evenly coat them. • Add to a 400° air fryer in a single layer and air fry for 12 minutes or until internal temperature is 165°. • Butter the tops of sister Schubert rolls and warm in the oven (4-5 minutes at 350°). Slice them horizontally, without cutting all the way through. Add a piece of chicken to each roll. Drizzle with warmed honey and serve.
