Chicken mushroom risotto • Here is the recipe in detail: • For 4 people • TOTAL TIME: 45 mins • Preparation: 20 mins • Cooking time: 25 mins • Ingredients : • 2 chicken breasts • 200 g Button mushrooms • 125 g Arborio rice • 1 small can of canned corn • 75 cl Poultry broth • 60 g grated Parmesan • 10 cl dry white wine • 1 medium onion chopped • 2 tbsp. thick crème fraîche • 2 tbsp. tbsp Olive oil • Salt • Mill pepper • Step 1: Heat 1 tbsp. tablespoon of olive oil in a frying pan, put the onion to sweat for 3 minutes over medium heat. • Add the rice, brown it for 2 minutes while mixing, then sprinkle with the dry white wine. • Step 2: As soon as the wine is absorbed, add a little chicken stock and mix gently. • Reduce heat to low. Gradually add all the broth. • Step 3: Meanwhile, salt and pepper the chicken breasts. • Slice them and cook them in a pan with the rest of the olive oil and the mushrooms, until the latter no longer release water. • Step 4: Add the drained corn, mix and cook for 3 minutes. Turn off the heat and cover. • Incorporate the parmesan and crème fraîche into the risotto once it is cooked, then adjust the seasoning. • Step 5: Mix the chicken and mushrooms with the risotto.
