Umami is the satisfying taste of savoury wholesomeness. It is mostly created by the amino-acid Glutamate and the nucleotides Inosinate and Guanylate. It's particularly strong when two or more of these compounds are combined, producing a synergistic effect. • Most foods contain some Glutamate but meat also contains Inosinate, and some mats have large amounts.
