Pinakbet is a delicious vegetables dish that originated in the Northern part of the Philippines. It was derived from an Ilocano term as pinakebbet , meaning shrunk . To cook it is to simply boil the vegetables and then seasoned with fish bagoong. • When the Spaniards colonized the Philippines, they introduced the cooking method of sauteing. Later on, in Tagalog region in Southern part of Luzon, the people in the said region created a variation of the dish, wherein instead of boiling the dish, they use sauteing in cooking the Pinakbet. They call the new version as Pinakbet ng Tagalog. • For more information about Pinakbet or Pakbet, please visit: http://www.myfilipinorecipes.com/pina... • • Main Ingredients: • 1 cup water • 4 tablespoons bagoong, (monamon preferred) • 5 string beans (sitaw), cut into 3-inch lengths • 1 ampalaya (Indian bitter melon), quartered • 6 pcs okras • 2 round eggplant (Indian eggplant), quartered • 1 onion, quartered • 1 tomato, quartered • 1 root ginger, crushed • 1/4 lb fried pork belly, cut in pieces • Optional Ingredients: • Bagnet • Patani • Kamote • Cooking Procecdure: • 1. Mix water and bagoong in a bowl or small container. • 2. In a pot or wok, put the vegetables in the following order: string beans, ampalaya, okra, eggplant, onion, tomato, and ginger. • 3. Add the pork belly. • 3. Pour the mixture of water and bagoong. • 4. Cover and boil in medium heat until all the vegetables shrinks and cooked.
