Tomato Soup Recipe

Tomato soup • 850g tomatoes on the vine • 1 red onion roughly chopped • 2 bulbs of garlic • 2 tsp salt • 1/2 tsp black pepper (1tsp if you like a kick) • 1/2 tsp red chilli flakes (1tsp if you like a kick) • 1/2 cup olive oil • 2 tbsp balsamic vinegar • 1 tsp oregano • 1 tsp mixed herbs • 1 tsp sugar • 300ml vegetable stock • 150ml double cream • • To start, roast the garlic bulb in either your oven or like I did in my ninja foodi • Place the garlic bulbs on foil, drizzle with a glug of olive oil, season with salt, pepper dried chilli flakes. Wrap up in the foil and bake at 200c fan for 25 mins • Remove the garlic from the foil and squeeze the cloves out of the bulb • Place the tomatoes, onion and garlic in to a baking dish before drizzling olive oil balsamic vinegar on top • Add all the spices and place in the oven at 200 fan for 30 mins • Remove the dish from the oven separate the tomatoes from the vines. Discard the vines before transferring the contents in a large saucepan • Add the vegetable stock to the pan before using a hand blender to blitz the mixture until it’s smooth • Sieve the mixture to remove the lumps and place back into the pan on a medium heat • Add the sugar and cream and allow it to simmer until the soup thickens • Once the soup reached the desired thickness, pour in your serving bowl enjoy ☺️ • • Handheld blender: https://amzn.to/3B4kahW (Affiliate link)
