Slice them in half lengthwise and place them in a single layer on a baking sheet/pan. Broil 8-10 minutes or until skins blacken and the flesh begins releasing juices. • While the tomatoes are broiling roughly chop half a small red onion, this makes it easier to puree. When the tomatoes have cooled off place all ingredients into a blender and puree to combine. Serve with simply with tortilla chips or atop your favorite Mexican dish. • Makes about 2 cups. Leftovers can be kept in the fridge for 2 days.
