This isn’t your mama’s sugar cookie recipe (which we’re sure is amazing). These soft and chewy Funfetti cookies are big, fluffy, and taste like they came straight from a bakery 🤤🍪 Studded with festive rainbow sprinkles, there’s one special occasion that comes to mind: PRIDE MONTH! 🌈🏳️🌈 #happypride • Now we don’t want to throw around the word ‘magic,’ but this entire recipe comes together in one bowl (hello easy clean up) in under 25 minutes. So yeah, like we said: magic 🪄🦄✨ • • Bakery Style Funfetti Cookies Recipe • • Ingredients: • • 3/4 cup unsalted butter, cubed • • 1 cup granulated sugar • • 2 large eggs • • 2 teaspoons vanilla extract • • 1/4 cup Harmless Harvest Coconut Smoothie • • 2 cups all purpose flour • • 1 1/2 cups cake flour • • 1 teaspoon corn starch • • 1 tsp baking powder • • 1/2 teaspoon baking soda • • 1/4 teaspoon salt • • 1 cup rainbow sprinkles • • Instructions: • 1. Preheat your oven to 350°F. Line baking sheets with parchment paper or silicone baking mats. • 2. In a large mixing bowl, cream together cold cubed butter and granulated sugar until light and fluffy. • 3. Beat in egg and vanilla extract until well combined. • 4. Gradually add Harmless Harvest’s Coconut Smoothie to butter-sugar mixture, mixing until smooth. • 5. In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. • 6. Gradually add dry ingredients to wet ingredients, mixing until just combined. Be careful not to overmix. • 7. Gently fold in half a cup of rainbow sprinkles until evenly distributed throughout cookie dough. • 8. Measure out about 8 5 oz. cookies. Roll dough in rest of rainbow sprinkles in a bowl or shallow dish. • 9. Bake for 10-12 minutes, or until the edges are lightly golden. These are meant to be large bakery style cookies. Baking time may vary based on your oven and size of your cookies. The centers may still look slightly soft, but they will continue to firm up as they cool. • 10. Cool for about 15 minutes and then transfer them to a rack to cool completely.
