Gurian Khachapuri - Ghvezeli • vegetarian • This type of khachapuri filled with cheese and hard boiled eggs comes from the area in Western Georgia called Guria, which borders the Black Sea to the west. Locals call these crescent-shaped cheese breads ghvezeli, which in Georgian means “pie.” They make them for New Year’s celebration, but ghvezeli is also a great everyday snack. • • I use 50 percent all-purpose and 50 percent of whole-wheat flour for this recipe. The white whole wheat flour is 100% whole grain but it is lighter and milder in taste than whole wheat flour. A superb combination of two flours has whole wheat health benefits, and I also find the flavor more enjoyable to eat. If you use only all-purpose flour, you’ll need to add more flour. These savory pies can be large or small to serve an individual portion. You can serve them for breakfast, lunch, or as a part of the dinner. • • Ingredients for Gurian Khachapuri - Ghvezeli • Serves 6 to 8 • Makes about 2 pounds dough • enough for 2 (12-inch) khachapuri or four smaller pies • For the filling • 1 1/ 2 pounds grated Sulguni cheese or 1/2 pound crumbled feta • and 1 pound grated low-moisture mozzarella (about 4 cups) • 4 large eggs, hard boiled • For the bread • 1/4 cup warm water • 1 packet (about 21/2 teaspoons) active dry yeast or 1 oz fresh yeast • 1 teaspoon sugar • 1 1/2 cups all-purpose flour, plus more for kneading and dusting • 1 1/2 cups white whole wheat flour • 1 teaspoon fine sea salt • 1 cup warm milk for the dough • 6 tablespoons olive or canola oil • 1 large egg yolk beaten with 1 teaspoon water (or milk) to make an egg wash • 1 tablespoons unsalted butter, softened • Cooking with Tamada’s Table will bring the finest recipes, seasonal dishes and authentic tastes of Georgian cuisine to your table.
