Recipe 46 Dates and Nuts Energy Bars

These delicious energy bars are perfect when you are traveling or even as a snack or dessert. These bars are fully packed with nutrients without any sweeteners or sugar. I always find dates as an excellent ingredient to make various desserts. • INGREDIENTS- • 2 1/2 cup dates • 1 cup almonds • 1/4 cup poppy seeds • 2 Tsp of cardamon powder • 3/4 cup pistachios • 1/4 cup pumpkin seeds • 1/4 cup sunflower seeds • 1 cup walnuts • 2 Tsp ghee or coconut oil • INSTRUCTIONS- • *In your food processor, finely chop almonds, pistachios, walnuts separately and keep it aside. • *Add the whole dates in your food processor and make it as fine you can without adding water. Once done keep it aside. • *In a pan over medium heat, add poppy seed and dry roast them for 3-4 minutes. Keep it aside when done. • *Now in the same pan add, 1/2 tsp ghee and almonds. stir them around for 1 minute. Keep it aside and do the same for pistachios and walnuts. • *Now add the leftover ghee in the pan and add dates, let it heat and keep mixing it around for 7-8 minutes until it slightly melts down and lets you work with it. • *Add in all the almonds, walnuts, pistachios (save very little for garnish), cardamon powder, pumpkin and sunflower seeds (save some for garnish) and poppy seeds (save some for garnish). • *Combine them all really good for a minute. • *In a rectangle dish lined with parchment paper, pour all the dates mixture and press it down really hard so that it takes the shape. • *Final step is to garnish it with whatever you saved, so sprinkle it all over the top and again press it down. • *Refrigerate it for 2-3 hours and it's done. • *Enjoy! • NOTES • These bars make amazing snacks, desserts or to go kind of food.
