Beetroot Sasive - Udupi Style is a simple, flavourful, tasty side-dish prepared using grated beetroot, coconut, mustard and green chillies. This dish tastes great with both cooked rice and roti/chapati. • Approx. preparation and cooking time: 20 mins • Serves 3-4 persons • List of ingredients: • 1. Grated beetroot - 1 large bowl (approx. 2 medium sized beetroots) • 2. Grated coconut - Half cup • 3. Green chillies - 3 • 4. Mustard seeds - 2 teaspoons • 5. Rice grains - 1 teaspoon • 6. Curry leaves - 1 sprig • 7. Salt - 1 teaspoon • 8. Oil - 1 tablespoon • Method of preparation: • 1. Into a broad vessel, add 1 large bowl grated beetroot, half cup water, cover with a lid and cook on low flame. • 2. Into the mixer jar, add half cup grated coconut, 3 green chillies, 1 teaspoon mustard seeds, 1 teaspoon rice grains, a little water and grind to make a smooth paste. Then, add the ground paste to the cooked beetroot and continue cooking on low flame. • 3. Add 1 teaspoon salt (can vary as per taste and quantity) and mix well. • 4. For the seasoning, into a small wok/pan, add 1 teaspoon mustard seeds, a sprig of curry leaves, 1 tablespoon oil and fry until the seeds start to splutter. • 5. Add the seasoning to the prepared dish and turn off the heat. • 6.
