Today we are making chocolate chip zucchini bread, cowboy candy, and giving a little update on one of our field corn fields. Thank you! • Starting our tomato plants from tomato suckers • It’s A Lot of Work, But It’ll Be Good... • Food Preservation Playlist • Food preservation • Farm Playlist • Farm • Gardening Playlist • All Things Garden • Cooking Playlist • Cook Healthy Whole Food from Scratch • Zucchini Bread • -1 3/4 cup AP flour • -1 1/2 tsp baking powder • -1/2 tsp baking soda • -1 1/2 tsp cinnamon • -1/2 tsp salt • Combine these ingredients in a small bowl, sit aside • In a seperate bowl combine • -2 eggs • -1/2 cup oil (lard, butter, or oil) • -3/4 cup brown sugar • -2 cups grated zucchini • -vanilla • Preheat oven to 350. Add dry ingredients to wet ingredients. Mix until just combined. Fold in 1 cup chocolate chips. Add to greased loaf pan. Add chocolate chips on top of bread if desired. Cook for around 50 minutes. Check with toothpick. Let cool in pan for 10 minutes. Remove from pan to a plate to completely cool. Enjoy now or freeze for later. • Cowboy Candy (Candied Jalapeños) • -50-60 jalopenos, sliced deseeded • -2 cups apple cider vinegar • -6 cups sugar (may split between white sugar and brown sugar if desired) • -1/2 tsp tumeric • -1 tsp garlic powder • -1 tsp pickling spice • Combine ingredients, bring to a boil, stirring frequently. Once boiling add in sliced jalapeños, bring back up to a boil, boil for 5-10 minutes until the jalapeños are no longer bright green. Using a slotted spoon, add jalapeños to sterilized jar. Keep heat on syrup so it is boiling when you add it to the jars. Add hot syrup to jars, apply lid and rings. Water bath for 10 minutes. Let sit at least a month before trying.
