A quick and simple sabzi made with arbi a.k.a colocasia is perfect for a fuss-free weeknight dinner! • ARBI KI SABZI • Ingredients • 300 grams colocasia, peeled and cut into roundels • 3 tbsps oil • ½ tsp red chilli powder • ¼ tsp turmeric powder • Salt to taste • 1 large onion, chopped • 1 tbsp ginger-garlic paste • ½ tsp red chilli powder • 1 tbsp coriander powder • ¼ tsp turmeric powder • ¼ tsp garam masala powder • 2-3 tbsps chopped fresh coriander leaves • Method • 1. Heat 1 tbsp oil in a non-stick pan. Add the colocasia and sauté till it turns golden brown. • 2. Add red chilli powder, turmeric powder and salt and mix well. Transfer it into a bowl. • 3. Heat remaining oil in the same pan. Add cumin seeds, and let them change colour. Add onion and salt and sauté till golden brown. • 4. Add ginger-garlic paste and sauté for a minute. Add tomato puree and mix well. Cook for 4-5 minutes. • 5. Add red chilli powder, coriander powder, and turmeric powder and mix well. Add the fried colocasia and sauté for a minute. • 6. Add ½ cup water and mix well. Add garam masala powder and coriander leaves and mix. Cover and cook for 6-8 minutes. • 7.
