The texture of this salad is truly out-of-the-world, as it combines the crispiness of toasted bread with the juicy crunchiness of veggies. A simple but flavourful olive oil based dressing adds to the charm of this salad, making it an incomparable treat. • Preparation Time: 15 minutes. • Cooking Time: 3 minutes. • Serves 4. • 1 Pita Bread (6”) • Olive oil for brushing • ¾ cup cucumber cubes • ¾ cup tomato cubes (deseeded) • ¾ cup iceberg lettuce, torn into pieces • ½ cup capsicum cubes • ¼ cup finely chopped parsley • ¼ cup finely chopped spring onion greens • ¼ cup chopped mint leaves (phudina) • ¼ cup thinly sliced spring onions whites • To be mixed into a dressing • 2 tbsp olive oil • 2 tbsp lemon juice • 1 tbsp finely chopped garlic (lehsun) • Salt and freshly ground black pepper (kalimirch) to taste • 1. Place a pita bread on a clean, dry surface and brush it with olive oil on both the sides. • 2. Heat a non-stick tava (griddle) and cook on a medium flame for 2 to 3 minutes or till it turns crisp and golden brown spots appear on both the sides. • 3. Cut the toasted pita bread into 25 mm.×25 mm. (1”×1”) cubes. • 4. Combine all the ingredients, along with the dressing in a deep bowl and toss well. • Serve immediately.
