Pizza, of course, is borrowed from Italian, but the deeper ingredients of the word, if you will, are unclear. Some think the Greek pitta (pita, with a root sense of “bran bread”) is the source. Others look to the Langobardic (an ancient German language in northern Italy) bizzo, meaning “bite.” • For the patties: • 1 cup homemade breadcrumbs or Panko • About 1 and a ⅓ cup whole milk • One handful flat-leaf parsley, finely chopped (about ¼ cup) • ¾ cup grated Parmigiano-Reggiano cheese • 1 teaspoon fennel seed, or ½ teaspoon fennel pollen (optional) • 1½ pounds ground sirloin or ground beef, pork and veal combined • Salt and pepper • 1 teaspoon granulated onion • 2 cloves garlic, grated or finely chopped • 1 egg, beaten • 1 tablespoon extra-virgin olive oil (EVOO) • For the sauce: • 1 tablespoon extra-virgin olive oil (EVOO) • 1 tablespoon butter • 2 cloves garlic, grated • Salt • 1 teaspoon red pepper flakes, optional • 1 teaspoon dried oregano, or 1 tablespoon fresh, finely chopped • One 14-ounce can crush or diced Italian tomatoes • 1 cup passata or tomato sauce • One handful of fresh basil leaves, torn • To serve: • 2 cups mozzarella, shredded • 4 cups arugula • Juice of ½ lemon • Drizzle of extra-virgin olive oil (EVOO) • Salt • Instructions • Preheat oven to 425˚F with rack at the center. Line a large rimmed baking sheet with parchment paper. • For the patties, combine breadcrumbs with milk to soften them. Add the parsley, parm, fennel, beef or mixed meats, salt, pepper, onion, garlic, egg, and EVOO, combine, and form 4 sections. • For the sauce, heat a medium saucepot over medium heat, add EVOO and butter and when it melts, add garlic, salt, red pepper flakes (if using), oregano, stir a couple of minutes, add ½ cup water and let it evaporate fully, add tomatoes and passata and heat to bubble, add torn basil and simmer 20 minutes. • Form 4 large thin patties of meatball mix from each section of meat. Arrange on a baking sheet and roast for 12 to 15 minutes, add sauce and mozzarella and bake 8 to 10 minutes more until brown and bubbly. • Toss arugula with lemon juice, EVOO, salt. • Place patties on plate and top with arugula, serve. • Click the Subscribe button and then click here for the recipe. • This show is about what I eat and what my family eats.
