The vine leaves are stuffed with a filling of mince meat, rice, onions, parsley, and with various herbs among other ingredients. You can also stuff other vegetables including: peppers, aubergines, lettuce, chard leaves, marrows, onions, cabbages etc. Koupépia are good to eat with Greek salad with feta cheese, and natural yoghurt. Vegetarian koupépia without the mince meat are also prepared with more rice as a substitute.
