Dry Aged Cowboy Ribeye Steak! This was so good! Super tender, super flavor and absolute delicious. This steak was grass fed and finished, and has been dry aged for at least 21 days. I got this steak from Vic farm Meats I will link their shop down below. Bacon Fat • 1 tsp. Rosemary • 1 tsp. Thyme • 1/2 tsp. Sage • 2 cloves of Garlic • 1 tsp. Cracked Pepper • • Instructions: • 1. Pat Steak dry and Season with Salt, Pepper, and Garlic Powder • 2. Preheat oven to 275 degrees Fahrenheit • 3. Place steak on a wire rack and place inside the oven until cooked to your desired temperature • 4. Cook your Bacon for the Compound butter until Super Crispy. • 5. Combine all your compound butter Ingredients and place in your fridge until firm • 6. Sear your steak in a cast iron pan until you get a great crust on both sides • 7. Baste the steak with your compound butter • 8. Rest Steak on a wire rack • 9. Top the steak with compound butter while resting • 10. Slice into the steak, top with Flakey Salt and enjoy! • Notes: Placing the steak on a wire rack is important to get an even cook. You can use any heavy bottom pan, cast iron works great, avoid from using thin non-stick pans. For a medium rare I would pull the steak out of the oven at 110 degrees Fahrenheit, so you have enough time to sear and baste. A perfect medium rare is anywhere from 130 -135 degrees Fahrenheit.
