The secret to good beer battered onion rings is the beer. I used a good quality beer from brewdog. Also, the beer needs to be super cold, so give it a good hour in the fridge before use. • I think they call fried onion rings 'onion straws' in the states, but the concept is basically the same. Light, golden, fluffed up batter, coupled with sweet sweet onions. what's not to love? • Now I used white onions for this recipe, but you could use red onions. red onions are much sweeter than white, so expect a different flavour. The colour would look cool though. • The beer gives the batter not only a nice flavour, but also a light, crisp shell.
