Itaki Pro Electric Lunch box recipes - S2E2 - Mapo Tofu! • Mapo tofu is a popular Chinese dish from the Sichuan province, where spicy food is very popular due in part to the wet climate. There’s a lot of history to this dish, but one of the reasons why Sichuan food are so spicy is the wet, cold climate there - the heat in the spice certainly warms you up! Growing up, my husband said he didn’t like this dish much since it was too spicy for him as a kid, but he certainly does love it now! Cut up 1 cup’s worth of firm tofu into cubes. Mince 1 clove of garlic and 1/2 teaspoon worth of ginger. Chop up 1 stalk of green onion. • 2. Make the sauce: In the large metal bowl, combine and stir together 1/2 cup of water, 2 tablespoons of chili bean sauce, 1/4 teaspoon of five spice powder, 1 teaspoon of sugar, 1 peppercorn and 1 teaspoon of cornstarch. Add in the tofu and set this bowl aside. • 3. To make the marinade, combine together the garlic, the ginger, a pinch of sugar, a pinch of white pepper, 1/8 teaspoon of fish sauce, 1/4 teaspoon of soy sauce, 1 teaspoon of cornstarch and 1/2 of the green onion. Add in 1/2 cup of ground chicken and stir. Put this in a separate container. • 4. In the small metal bowl, add in a single portion of uncooked rice for you. for us, it’s 80 ml of uncooked rice. Start by pouring your single portion of rice into the small food compartment of the Itaki Pro and wash your rice three times. Place the small metal bowl on top of the large metal bowl and put on the plastic lid. Put the metal bowls into the itaki pro, close up the unit and put everything in the fridge until you’re ready to cook. • It's LUNCHTIME • 5. About 1/2 an hour before you’re ready to eat, take your items out of the fridge. Open up the itaki pro, and add the chicken to the large metal bowl,. Stir to break up large pieces. Stack the rice back on top of the large bowl. • 6. Add 80 ml of water to the heating plate and place the metal bowls on top of the heating plate. Close the lid on the itaki pro, snap the sides closed, plug in the unit and push the button to turn it on. 1/2 an hour later, your food will be ready for you. • EAT! • Be sure to soak up the oily sauce with lots of rice. If you want to make it a little bit healthier, consider using chicken instead of turkey! Or you could use ground pork (as normal) or beef. If you really want to enhance your Mapo Tofu even further, sprinkle on some freshly ground Szechuan peppercorn powder right before serving for that numbing taste!
