In this video I'm going to share with you an authentic pork roast that I personally cooked during my trip to Sardinia. • Sardinian food is a diverse array of dishes unique to the island. And a pork roast is definitely one of them. When it comes to second course options I can't think of a better dish than the fire roasted suckling pig. It's called maialetto in Italian. • There are only two ingredients needed: a suckling pig and salt. An optional 3rd ingredient are mirto leaves for more aromatics. • Roasting time: 4 hours • How do you know when it's done? The skin has to be crunchier that a potato chip. • Here's another trick: stick a fork into the meet. When you pull the fork out, put the teeth of the fork on the top of your hand. If it's super hot, that's a sign it's done too. • What's the perfect wine paring with suckling pig from Sardinia? • Cannonau di Sardegna • Sardinia is world famous because more of its people live to be 100 years old than any other place on Earth!
