Onions, tomatoes, potatoes and spinach, cooked in aromatic and flavourful spices, This Aloo Palak recipe is definitely going to be a family favourite. • DHABA STYLE ALOO PALAK • Ingredients • 1 large bunch of spinach leaves • 2-3 medium potatoes, unpeeled and cut into quarters • 2 tsps oil • 1 tsp cumin seeds • 1-2 green chillies, chopped • 1 medium onion, chopped • 1 inch ginger, finely chopped • 1 tsp finely chopped garlic • 1 large tomato, finely chopped • Salt to taste • ¼ tsp turmeric powder • ¾ tsp red chilli powder • ½ tsp cumin powder • ½ tsp coriander powder • ½ tsp Tata Sampann Garam Masala • Ginger strips for garnish • Parantha to serve • Method • 1. Heat sufficient water in a deep pan, add spinach leaves and blanch for 1-2 minutes and drain them into ice cold water. Gently squeeze the excess water and set aside. • 2. Transfer the spinach into a blender jar, add ¼ cup water and blend to a fine paste. Set aside. • 3. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add green chillies, onion, ginger and garlic. Sauté till onion turns translucent. • 4. Add tomato and mix well. Add potatoes and sauté. Add salt and sauté for 1 minute. Cover and cook till the potatoes are cooked completely. • 5. Add turmeric powder, red chilli powder, cumin powder and coriander powder. Add Tata Sampann Garam Masala and mix well. • 6. Add the prepared spinach paste, ½ cup water and mix well. Cover and cook for 4-5 minutes. • 7. Adjust salt, mix and take the pan off the heat.
