Line the tartans with butter. Put 2 cups of flour in a bowl and dip the buttered tins in the flour. Shake off the excess. • 2. Spray all the buttered and floured tins with water. Dip the tins in the flour for a second time; shake off the excess flour and spray with water. Repeat 3 more times. • For the filling: Pre-heat the oven to 350 F. • 1. In a blow mix the eggs, sugar, flour, salt and cinnamon together. After blended, mix in the ricotta cheese and mix well. • 2. Place in the oven for 20-30 minutes. Until it reach and internal temperature of 175 F. or until golden and set firm. • 3. Let cool for about 15 minutes. • 4. Next. Tap the side of the tarts on a cutting board to release the pastry. • 5. Dust the top with powdered sugar. • Alternatives: other variations I have tried is to substitute half the ricotta cheese with cottage cheese or goat cheese they are all delicious.
