Understand the manual process and thereby, the quality of Vendace roe from Kalix. • 20th of September marks the annual premier for sustainable fishing of Sweden’s most exclusive produce - the Vendace roe from Kalix. This is a small village located in the northern part of Sweden, close to the Finnish border. For a few weeks each year, an intense work begins in the production of Sweden's finest produce. After landing the catch, the roe is removed by hand from the female Vendace fish. The roe is then rinsed, excess water allows to dry, and after that roe is salted and packed as Kalix Löjrom. Kalix vendace roe became Sweden's first food product to receive a protected designation of origin.
