Poke bowls remind me of our end-of-the-year family vacations in Hawaii. It really takes me back to paradise every time. Poke in general is so versatile and in our household, it’s always made with a slightly different variation from before. If you enjoy seafood or sushi, I’d say there’s a really good chance you’ll absolutely love poke. Try this salmon poke bowl recipe or my ahi poke recipe I made in early January and please let me know what you think in the comment section: Enjoy! • Recipe - This recipe is not strict on measurements. In other words, start with a little and adjust to your palate. • INGREDIENTS • Shashimi grade Salmon with skin, 1 cm cubed, 1/3 lb • Soy Sauce, 1 - 2 tsp • Sesame Oil, Toasted, 1 - 2 tsp • Rice Vinegar, 1 - 2 tsp • Macadamia Nuts, crushed, 2 • Green Onion, 1 tsp • Avocado, thinly sliced, 1/4 • Crushed Red Pepper Flakes (optional), 1/2 - 1 tsp • Hawaiian Black Lava Sea Salt, 1/2 - 1 tsp • Furikake, 1/2 - 1 tsp • Salmon Skins • Preparation - • To cook rice, first measure out 1 cup of Jasmine rice and wash with room temperature water until the cloudiness disappears. Add a cup of water to the rice pan insert and cover the cooker. Cook for 25 minutes. The cooker will change into warm and allow to steam for an additional 10 - 15 minutes. Total cooking process will take 35 - 40 minutes. After this steaming process is complete, stir the rice from the bottom. It's ready to serve. • Add the cubed salmon into a prep bowl along with soy sauce, sesame seed oil, and rice vinegar. Add crushed red pepper flakes and lava sea salt to taste. • While that marinates for about 10 minutes, set your salmon skins (skins facing up) on a sheet of aluminum foil and place into a toaster oven on broil for 8 - 10 minutes or until desired crispiness. • Crush the macadamia nuts with a mortar and pestle or any other method. Thinly slice an avocado. • Once the salmon skins are done, transfer to a cutting board and turn over to remove any little bits of salmon meat. Chop (finely chopped is best) the salmon skin. • • Now bowl ingredients with rice at the bottom, poke, and then top with avocado, salmon skin, green onion, macadamia nuts, and Furikake. Feel free to add more sea salt. Enjoy! • If you would like to make a donation to support the channel, please click on the following link. I am immensely grateful for your generous contribution.
