Pepper Decanter Bourbon. What struck me as unique about it was that it was a low proof “Barrel Proof” bourbon. That meant that each barrel must have been filled at a very low proof as the final blend came out to an undiluted 107.6 proof. The other thing I liked about its creation is that they used barrels that contained staves that were air seasoned for 18-24 months. When you add up those two positive factors with the fact that each barrel contained their own distillate that was aged up to an average of 5.5 years old, this release still had me a little concerned. But at only $60 I took a shot and am glad I did! • The ASW (Atlanta Spirit Works) Fiddler “Georgia Heartwood” Single Barrel Bourbon is made from a mash bill of 51% corn, 45% wheat, 4% barley (I believe sourced from Ross Squibb – aka MGP in Indiana). It’s over 4 years old and was finished for 3 or so months on hand harvested (and charred) Georgia White Oak “Heartwood” staves. It was bottled at 116.2 proof and retails for around $95.
