It's perfect for a cold winter day, and it'll soon become a regular in your meal rotation. • We tripled the recipe to freeze for easy quick meals. • 1 (1-pound) package Red Kidney Beans • Suggested Brime 1 t per lb baking soda, 3 T salt per lb • adding both salt and baking soda produced the best results in texture, and reduced the cooking time significantly for both black and kidney beans. • • 1 (32-ounce) container no-sodium vegetable broth • • 4 cloves garlic, finely chopped • • 1 large yellow onion, chopped • • 4 celery stalks, chopped • • 1 large green bell pepper, chopped • • 2 tablespoons olive oil • • 3 bay leaves • • 2 teaspoons thyme • • 1 teaspoon oregano • • 1/2 teaspoon red pepper flakes • • 1/2 teaspoon ground black pepper • • 1/2 tablespoon hot sauce • • 2 teaspoons Liquid smoke seasoning • • Water as needed • • Salt to taste • Splash of apple cider vinegar T or 2 • • 1 pound (455g) dried beans, picked of any debris and rinsed. I look my beans, remove any broken beans. I've found rocks in beans before. Don't want that :o • Wash beans remove any floaters this could indicate a bad bean. Soak using your preferred method. I highly recommend a brime of salt and baking soda. The soda produce the best texture bean, reduce the volume of gas, and cook quicker. • Soak overnight in covered container on counter or frig. • Chop onion, celery, green pepper • Add to Dutch oven with olive oil • Sauté till soft but not fully done, add garlic sauté slightly • Add the remaining ingredients except the salt and vinegar • Bring to a boil, reduce to simmer, cover and simmer for approx 2hrs • Wait until the beans are tender but not quite done to add a splash of apple cider vinegar and a couple teaspoons of salt to the pot. The apple cider vinegar breaks down indigestible sugars to help digestion and also brightens the flavor of the beans without the need for excess salt. • • For a creamier texture, process half the beans in a food processor or blender until smooth. Add processed mixture back to pot. • • Salt to taste and serve over cooked rice, with greens, corn breads and enjoy!!
