Low-glycemic load delicious-nutritious vegan ice cream! This super healthy ice cream consists of the Blue Zone Okinawan purple sweet potato in it's raw state AND with the peel left on. Research has shown that the peel can contain a lot the beneficial substances that are attributed to the purple sweet potato. In fact, I think it's the peel that also gives this recipe it's Bubble gum ice cream chewy texture with a few chunks scattered about. Similar to chunky peanut butter. • Recipe: • 1 frozen banana • 2-3 small pieces of frozen purple sweet potato • 1 tsp peanut butter • Soymilk to desired texture/consistency • Cinnamon • 1 tsp flaxmeal • *Wheat grass powder optional • References: • The Modulatory Effect of Anthocyanins from Purple Sweet Potato on Human Intestinal Microbiota in Vitro- https://www.ncbi.nlm.nih.gov/pubmed/2... • The Okinawan diet: Health implications of a low-calorie, nutrient-dense, antioxidant-rich dietary pattern low in glycemic load- https://www.ncbi.nlm.nih.gov/pubmed/2... • Antioxidative activity of anthocyanins from purple sweet potato, Ipomoera batatas cultivar Ayamurasaki- https://www.ncbi.nlm.nih.gov/pubmed/1... • Changes in sugar composition during baking and their effects on sensory attributes of baked sweet potatoes- https://www.ncbi.nlm.nih.gov/pmc/arti... • Cooking Treatment Effects on Sugar Profile and Sweetness of Eleven-Released Sweet Potato Varieties- https://www.omicsonline.org/open-acce... • Phenolic composition and antioxidant capacity of different heat‐processed forms of sweetpotato cv. ‘Beauregard’- https://onlinelibrary.wiley.com/doi/a... • In vitro and in vivo hypoglycemic effects of cyanidin 3-caffeoyl-p-hydroxybenzoylsophoroside-5-glucoside, an anthocyanin isolated from purple-fleshed sweet potato- https://www.ncbi.nlm.nih.gov/pubmed/3...
