Keep the kids at home with this delicious seafood recipe! • SQUID KOLIWADA • Ingredients • 10-12 medium squids, cut into rings • Salt to taste • 3 tablespoons rice flour • 1 tablespoon ginger and garlic paste • 2 teaspoons kashmiri red chilli powder • 1 teaspoon roasted cumin powder • 2 tablespoons lemon juice • 1 cup gram flour (besan) • ½ cup yogurt • Oil for deep-frying • ½ teaspoon Chaat masala • ½ teaspoon crushed black pepper • Green mint and coriander chutney to serve • 2 tablespoons chopped fresh coriander and fresh mint leaves • Method • 1. Place the squid in a bowl. Add the salt, ginger-garlic paste, red chilli powder, cumin powder and lemon juice and mix well. • 2. Add the gram flour and mix. Add the yogurt and mix. • 3. Heat sufficient oil in a kadai. Add the squids, one by one, ensuring that the kadai is not crowded. Deep fry till crisp and golden. Drain on absorbent paper. • 4. Arrange them in a serving platter and sprinkle chaat masala on top.
