SAMOSA CHAAT • Here's a delicious recipe for Samosa Chaat. It's a popular Indian street food made with crispy samosas, chole (chickpea curry), chutneys, and various toppings. Here's how you can make it: • Ingredients • For Samosas: • 4 medium-sized samosas (store-bought or homemade) • For Chole (Chickpea Curry): • 1 cup chickpeas (soaked overnight or use canned chickpeas) • 1 medium onion (finely chopped) • 2 medium tomatoes (pureed) • 1 tsp ginger-garlic paste • 1 tsp cumin seeds • 1 tsp coriander powder • 1/2 tsp turmeric powder • 1 tsp garam masala • 1 tsp red chili powder (adjust to taste) • Salt to taste • 2 tbsp oil • For Tamarind Chutney: • 1/2 cup tamarind pulp • 1/4 cup jaggery or sugar • 1 tsp cumin powder • 1 tsp red chili powder • 1/2 tsp black salt • For Green Chutney: • 1 cup fresh coriander leaves • 1/2 cup fresh mint leaves • 1 green chili • 1 tsp cumin powder • Salt to taste • 1 tbsp lemon juice • Water as required • Toppings: • 1/2 cup yogurt (whisked) • 1/2 cup sev (crispy chickpea noodles) • 1 medium onion (finely chopped) • 1 medium tomato (finely chopped) • Fresh coriander leaves (chopped) • Red chili powder, chaat masala, and roasted cumin powder (for garnish) • Instructions • Step 1: Make Chole (Chickpea Curry) • Cook Chickpeas: If using dried chickpeas, soak them overnight. Pressure cook them with water and a pinch of salt for 6–7 whistles, or until soft. If using canned chickpeas, drain and rinse them. • Cook Masala: Heat oil in a pan, add cumin seeds. Once they crackle, add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute. • Tomato Puree: Add pureed tomatoes and cook until the oil separates from the mixture. • Spices: Add coriander powder, turmeric powder, red chili powder, and garam masala. Cook for 2 minutes. • Combine: Add the cooked chickpeas and some water to adjust consistency. Let it simmer for 10–15 minutes. Add salt to taste. • Step 2: Make Tamarind Chutney • In a saucepan, combine tamarind pulp, jaggery (or sugar), cumin powder, red chili powder, and black salt. • Cook on medium heat until the mixture thickens.
