Classic Alfajores • Makes around 14 2” biscuits • Ingredients: • For the cookies: • • 225 g cornstarch • 130 g all-purpose flour • 1/2 tsp baking powder • 1/4 tsp baking soda • 175g unsalted butter (softened) • 75 g sugar (about 1/3 cup) • 4 egg yolks • 1 teaspoon vanilla extract • 1 tablespoon lemon zest (optional) • For the filling: • •Dulce de leche • For coating (optional): • •shredded coconut • Instructions: • 1. Prepare the dough: • In a bowl, sift together the cornstarch, flour, baking powder, and baking soda. • In a separate bowl, cream the softened butter with the sugar until light and fluffy. • Add the egg yolks, vanilla extract, and lemon zest (if using) to the butter mixture and mix well. • Gradually add the dry ingredients to the wet mixture, blending just until the dough comes together. The dough should be soft and smooth. • Wrap the dough in plastic wrap and refrigerate for 30 minutes. • 2. Shape the cookies: • Preheat the oven to 170°C (350°F). • Roll out the chilled dough on a floured surface or between 2 baking papers to a thickness of about 5 mm (1/4 inch). • • Place rolled dough into fridge for 15mins. This helps fork the dough to cut the cookies • Cut out circles using a cookie cutter (2 inches in diameter). • Place the cookies on a baking sheet lined with parchment paper. • 3. Bake the cookies: • Bake in the preheated oven for 10-12 minutes. The cookies should remain pale in color but firm to the touch. • Allow the cookies to cool completely on a wire rack. • 4. Assemble the Alfajores: • Spread about a tablespoon of dulce de leche on the flat side of one cookie and sandwich it with another cookie. • Optional: Roll the edges of the alfajores in shredded coconut. • 5.
