Tarte aux Pommes French Apple Tart

This french apple tart is delicious and fruity. The flavor of the apples is central and the simplicity allows these to shine through with amazing clarity. This is a must-make recipe. • Although some French-language recipes do suggest starting with apple sauce, making your own compote for the base layer gives you a lot more freedom for shaping the final product. • Follow me on: • Youtube: / @worldtravelercooking • Tiktok: / einhverfr • instagram: / christravers76 • Patreon: / einhverfr • Based on recipe from https://www.marmiton.org/recettes/rec... • Recipe (serves six): • ------------------------- • 1 kg (2 pounds and a bit more) green or yellow apples. • 1-1.5 tsp vanilla sugar (could use a bit of vanilla extract and sugar) • 35g (2.5 T) butter • 1 pie crust • 150 ml (1/2 cup) or so of water • (if making crust): • 300g flour • 120g butter • 1/4t salt • ice water as needed • Crust: • work the butter mostly into the flour. It is ok if a few very small pieces remain. Add ice water a few tablespoons at a time until a pliable ball is formed. Cover and let rest in the fridge until ready to use it. • Take 2/3rds of the apples. Peel and cut them into small pieces. Add water, cover and bring to a boil. Simmer until the apples are soft and easily mash. That can take 30 minutes, possibly more and possibly less depending on the apples. Add the vanilla sugar and mix well. Remove from the heat and allow to cool a bit (moving onto the next step during this process). • Preheat oven to 210C/425F. • Roll out crust and shape around pie or tart pan. I prefer to put baking paper between the crust and the pan, but you can also butter the pan instead. Shape the edges and poke holes in the bottom. • Peel, quarter, and slice the rest of the apples. • Assemble the pie with the cooked apple compote on the bottom. Then arrange the apple slices decoratively on the layer above (spirals and concentric circles are both popular). Then top with slices of butter. • Bake for up to about half an hour. Don't let the apples burn. Remove from oven and allow to thoroughly cool. Enjoy!
