Welcome to Rei's Kitchen! • HOMEMADE TAHO • Silken Tofu / Taho: • 500 grams soybean • Water for soaking • 3 liters purified water • 1Tbsp calcium sulfate (coagulant) • 1Tbsp water • Tapioca Pearl/Sago: • 6 cups water • 1 cup small sago (tapioca pearl) • Syrup/Arnibal: • 1 cup light brown sugar • 1/2 cup muscovado • 3/4 cup water • 3-4 pandan leaves • Note: If muscovado is not available, you may use 1 1/2 cup of dark brown sugar • Optional: Black Pearl • How to cook Black Pearl : • Minatamis na Saging at Sago | Filipin... • Procedure: • Silken Tofu: • Soak soybeans in water for 8-10 hours. • After 8-10 hours, remove the floating outer skin of the soybeans. • Drain and rinse the soybeans. • Prepare the 3 liter of purified water, we will use it to blend the soaked soy beans. • Blend the soybeans (start with 1 1/2 cup to 2 cups). Use the water from 3 liters purified water to blend it. • Once pureed, pour it in a container with cheesecloth. • Squeeze out the liquid (soymilk) as much as you can. Repeat the process until you finish all the soaked soybeans. • Skim off the foam from the soymilk and boil it under medium heat stirring constantly to prevent burning. • Let it rest for 10 minutes. • Meanwhile, mix 1Tbsp calcium sulfate and 1Tbsp water. • After 10 minutes, remove the skin of the soymilk and pour it (1 ft) above the calcium sulfate mixture. • This is to ensure that that soymilk and calcium sulfate are mixed even without stirring. • Cover and let it rest for 45 minutes. Do not shake the container or stir the mixture. • NOTE: Prepare the tapioca pearl and arnibal ahead of time. You may make this while the soybeans are still soaking. • Sago/Tapioca Pearl: • Boil water and pour in the small sago stirring frequently. Once boiling, lower the heat and simmer for 15 minutes. Drain, rinse, and soak it in water. • I soaked mine for 6 hours and noticed that the sago became transparent. • Arnibal/Syrup: • Mix water and sugar. Cook for 8 minutes. Let it cool. • Optional: Black Pearl • How to cook Black Pearl : • Minatamis na Saging at Sago | Filipin... • Once cooked drain and rinse the tapioca pearls. Put it in a pot and add 1/2 cup brown sugar and 1/3 cup water and pandan leaves.
