Recipe below๐ Pasta Carbonara (Roman style but our own take)๐ท๐ค (by Fabio). • Servings: 2 • Ingredients: 250g Pasta (we used a whole wheat rigatoni - but spaghetti or rigatoni works well for this), Guanciale (you can use another type of bacon too, but this one is fatty and rich), 3 eggs, pecorino cheese • Step 1: Cut and fry the guanciale - when it is crunchy (and almost burnt), you know it’s done. • Step 2: Save the bacon fat and pour it into a little bowl, you will need it! • Step 3: Boil water, generously add salt to the water, add the pasta and cook it until al dente (10 mins for rigatoni) • Step 4: In the meantime, grate the pecorino cheese - use A LOT! • Step 5: When the bacon fat has cooled, crack the eggs into it and whisk with a fork until creamy. • Step 6: Drain the pasta at this point and save a little bit of pasta water. • Step 7: Mix everything together back in the pot.
