Gouda cheese is one of the world’s most beloved cheeses, and with good reason. Its sweet aroma and creamy taste and texture make it an easy cheese to love! • Gouda cheese was ubiquitous at my childhood kitchen table. As a daughter of Dutch immigrants, Gouda was a staple in my day, and I have many fond “cheese and toast” memories with my family. As a result, I’ve always wanted to learn how to make Gouda cheese, and it’s the first aged cheese I ever attempted. It’s not difficult to learn how to make Gouda cheese at home. Give this recipe a try. You just might be surprised how easy cheese making can be. • • Washed curd cheeses, such as Gouda, have a low acid profile, which may not protect from late fermentation from unwanted bacteria, either in the beginning, or later down the road during aging. I recommend that all water used in the cheesemaking process is either boiled and cooled before use, or is distilled. The addition of a 30 minute acidification step at the very beginning of the recipe may deter unwanted bacteria from getting a foothold in the process.
